The Einkorn Shoppe Brings Fresh-Milled Ancient-Grain Bread to Oakville

Oakville has a new bakery built around an old grain. The Einkorn Shoppe opened at 1428 Speer Road, Unit 19 on June 22, specializing in fresh-milled bread made from einkorn, an ancient variety of wheat that owner Gibbs Petit-Frere says is nutrient-dense, easy to digest, and hard to find anywhere else.

What sets the shop apart is the milling. Petit-Frere grinds whole einkorn grain on site for every loaf, then bakes it fresh using traditional techniques. The menu runs from sourdough sandwich loaves and Montreal-style bagels to cinnamon loaves, muffins, and a quiche with an einkorn shell.

He is self-taught, and started baking with einkorn in 2023, selling at the Bronte Farmers' Market before opening the storefront. In his words, the heritage grain is "nutrient-dense, easy to digest, and it tastes great."

The bakery also delivers locally across Oakville, Burlington, Milton, Mississauga and Etobicoke, with expedited shipping available across Canada. Petit-Frere plans to expand the menu once he hires more help, so the loaf list should keep growing.
